How to make a Mojito at home – The inside recipe
To many people, the Classic Mojito represents the perfect rum cocktail.
The origins of the drink can be traced back to Cuba and the 16th-century Cuban cocktail El Draque, named for Sir Francis Drake.
When we make our Mojito we use rum, lime juice, sugar syrup, fresh mint leaves, and soda.

You will need:
50ml White rum
25ml Lime Juice
20ml Demerara Sugar Syrup (includes Demerara sugar)
8 Mint Leaves
Soda
Crushed Ice
How to:
1. Fill a small glass with ice, and place in a freezer to chill.
2. In a glass, pour in your lime juice & then your sugar syrup.
3. Put the mint leaves on one hand and clap. This bruises the leaves and releases the aroma.
4. Rub the mint leaves around the rim of the glass and drop them in.
5. Use a muddler, bar spoon (or even a rolling pin) to gently push the mint down into the lime juice.
6. Half fill the glass with crushed ice and pour in your white rum.
7. Stir the mix together until the sugar dissolves.
8.Top up with crushed ice, a splash of the soda water and garnish it with a sprig of mint
How to make the Sugar Syrup
1:1 of sugar & hot water – eg. (100ml hot water/100g demerara sugar) Then leave to cool.
How to make Crushed Ice
Place ice in a bag or wrap some in a tea towel and bash with a rolling pin.
